Chef Haigo has gained extensive experience working in both successful and struggling restaurants throughout his career. He also spent six years as the Supervising Culinary Producer for a popular restaurant-renovation series, traveling across the country to relaunch failing restaurants into viable, profitable businesses. In this role, he developed creative food and beverage menus aligned with current food trends while remaining unique to the establishment. He designed efficient kitchen and bar layouts, created comprehensive front- and back-of-house operational manuals, and implemented systems focused on consistency, workflow, and cost control for a total of 152 establishments over six years. He also trained staff and management on these systems, ensuring their ability to execute the menu and steps-of-service reliably and efficiently.
